7-22-12 Homemade Guacamole and Poppers, the Vicki tutorial

Rachel Ray, I am not, but here's the play by play.

For Vicki, who says she can't make guacamole like we can get it table-side at Los Dos. After you do this a few times, you choke on how much they charge at the restaurant.


Ingredients:

Guac
3 Ripe Avocados
1 medium tomato, chopped
1/2 a lime
1/8 C of cilantro, minced
onion power, salt, and pepper to taste

Peel and mash avocado, mix in all other ingredients and squeeze 1/2 to one whole lime (if you're Vicki), chill in fridge while you make the poppers.

Poppers
10 jalapenos, cored and washed
1/2 pkg. sausage, browned and drained 
2 ounces cream cheese, softened
2 ounces shredded mozzarella
2 T cilantro, minced
onion powder, salt, and pepper

(note: I have a thing with onion texture, so in my recipes, 
substitute the real thing for powder if you can stand it.)

Mix all ingredients and stuff poppers to overflow capacity. Bake at 425° for 15 minutes. Line your pan with foil cause baked on cheese is particularly troublesome.




This little feast will feed three and will cure what ails you. Enjoy!
